Located at the ground floor of Nuwa Hotel (formerly Crown Towers) in City of Dreams Manila, “The Tasting Room” is a modern European restaurant with an Asian twist headed Chef Frederic Thevenet. Their four – course or six – course menu creation comes with a full selection of wine from the finest vineyards in France, Italy, Spain and Australia. Some of the ingredients are locally sourced (like lobster) and the flavor is just as fabulous as its European or American “relatives”.

The place is truly elegant and has touches of art deco and post modern designs which is quite evident on the sleek furniture and its imposing wine and liquor shelves. The look is absolutely timeless.
Each course is paired with carefully selected wines that were truly fit to complement the flavors of each dish.
First Course: Sea bass carpaccio with red and black radish, artichoke cream, cucumber jelly, celeriac remoulade, banana blossom, veal tongue, vinaigrette, and pickles
The unforgettable dinner started with sea bass carpaccio (thinly sliced fish), a great way to prep our taste buds for an unforgettable culinary experience that is about to unfold. Each bite is like an explosion of flavors of the sea.
The banana blossom, veal tongue and pickle salad were a great addition to the first course.
Wine pairing: 2016 Cloudy Bay, Marlborough, Sauvignon Blanc
Second Course: Lobster with Espelette pepper, ginger and lobster bisque
Of all the dishes that we have tried, this has got to be the most unforgettable. The lobsters were not overcooked and it was easy to eat with a slightly chewy texture. The flavors are extremely satisfying, mainly because of the bisque (creamy soup), topped with mango chunks for an added fruity and sweet aftertaste. This is a fantastic fusion of Asian and French cuisine.
Third Course: Cape Grim Grass Fed Beef Tenderloin, Potato Gnocchi, Baby Spinach, Beetroot
This was definitely a hit! The grass fed beef was cooked the way I wanted it (medium rare) — so tender and tasty! It was the best beef I have ever tasted so far: made special with red beet puree, white onions, freshly ground black pepper and sauteed spinach. The potato gnocchi (Italian soft dough) on the other hand was a good addition if you need something “heavy” to be paired with the meat.
Wine Pairing: 2011 Penfolds Bin 389, Cabernet Sauvignon & Shiraz
Wine Pairing: 2013 Jurancon, Clos Lapeyre – a dessert wine with the hints of apricot and honey. A great match with every bite of the chocolate dessert.
Made of pineapple, blackberry, and lychee jelly with champagne sorbet. I’ll have this fruity and light dessert to cleanse my palate anytime. It’s so good!
Chef de Cuisine Frederic Thevenet made sure that each meal course perfectly complements each other. No room for errors! I admire his dedication in making sure that each meal is in perfect quality. Truly, customer satisfaction is their number one priority here at the Tasting Room.
Isn’t this a very elegant bar? It becomes more impressive because of the selection it carries which is one of the major factors considered by most diners, aside from quality dishes and good service. I was able to see genuine smiles from their staff which helped them execute each of the steps they have to do in order to serve us better, starting from the receptionist to the servers and up to the kitchen staff and restaurant manager Stepehen Moroney.
We definitely recommend The Tasting Room as a venue for intimate celebrations like anniversaries, birthdays or thanksgiving. We enjoyed our experience and we are definitely coming back and we will try their six – course meal. Here are the prices:
